"5-minute" steak with blue cheese butter

This is an easy to follow method of cooking "steak house" restaurant style steaks at home, with a crusty exterior and juicy, rare interior. The recipe calls for tenderloin fillets, but you can substitute with other thick cuts, such as Delmonico, strip, or sirloin.

For the steak
  1. 4 (1 1/2 to 2 inches-thick) beef tenderloin fillets
  2. Coarse salt and freshly ground black pepper to taste
  3. 1 tablespoon olive oil
  4. 1 tablespoon butter
For the Blue Cheese Butter
  1. 4 tablespoons unsalted butter, softened
  2. 1 1/2 ounces blue cheese, at room temperature
  3. 1/4 teaspoon coarse salt
  4. 2 tablespoons minced fresh chives (optional)
Instructions
  1. Let the steaks sit at room temperature for 30 minutes before cooking. Preheat the oven to 425 degrees.
  2. Pat the steaks dry with a paper towel. Season on both sides with salt and pepper.
  3. In a cast iron skillet, heat the oil and butter over medium-high heat until lightly browned and sizzling. Add the steaks and sear on one side for 5 minutes. Using tongs, turn the steaks over and immediately transfer the skillet to the oven. Roast for 5 minutes. Remove the skillet from the oven and let the steaks rest, uncovered, for 5 minutes before serving.
  4. For the blue cheese butter, combine the unsalted butter, blue cheese, salt, and chives (if using)in a small bowl. Using a spatula, mix until smooth.
  5. While the steaks are resting, spoon a dollop of blue cheese butter on each one.
